Valentines 3 Course Plant Based Meal For Two- Part Two- Magazine Feature

When we think of a romantic meal, it just has to be pasta doesn't it? I am not sure if it's because it's channelling the sexy Italian vibes or the lady and the tramp vibes, but a bowl of delicious spaghetti just screams a romantic date for two.

This pea pesto is so fresh and simple but it's incredibly tasty. A twist on the usual pesto, we've included fresh mint and the added nutritional yeast gives it that glorious parmesan style flavour. The best bit is you can store the homemade pesto in the fridge for later uses too.


To make one pot of pesto:

75g of peas

Two big handfuls of fresh basil

A handful of fresh mint

60g of pine nuts

2 garlic cloves

The juice of half a lemon

4 tbsp of olive oil

4 tbsp of water

4 tbsp of nutritional yeast

A pinch of salt

An optional dash of vegan cream

Two portions of spaghetti


It's fairly easy to make this pesto, all you need to do is add all of your ingredients to a blender or processor and blend!

We have added some vegan cream to ours, but you can leave it out depending on your preference. If the pesto is also a bit thick you can just add more water. The best thing to do is taste it when you have finished blending and see if it is perfect for your palette.

Once your pesto is at a consistency you like, it can be stored in a sealed pot in the fridge for a few days, which of course means more pasta!

Finally boil your chosen pasta and drain, add to a bowl and add two or three spoonfuls of the pesto. Stir together and serve with a slice of lemon and some fresh mint leaves.
