A nice easy recipe today as I am a little short on time and energy as it has all gone into designing instead.
Now this might be easy peasy, but it's also SO delicious and a great source of vitamins too which I am in dire need of at the moment (is it just me who tends to snack on bad things when I am working lots and distracted or does anyone else?)
So to make this I just whopped some veg in the oven with a drizzle of olive oil and a sprinkle of salt and pepper and left it to roast for 20 mins or so. At the same time I boiled some rice.
When both where done I added a good glug of the peanut satay sauce from a recipe a few weeks back....
