If you saw my stories on Sunday, you will have seen that we had a fiesta style party for my Uncle's 50th. I decided to go all out with jackfruit tacos, pineapple salsa, grilled corn on the cob, sweet potato fries, nachos and all the accompanying dips. Not forgetting the sangria too of course!
These tacos are the perfect party food- they are fun, easy to make and you can hold it in one hand while you have a sangria in the other!
This recipe makes a whopping party sized 60 tacos, so half or quarter the ingredients if you want less.
Ingredients for the jackfruit filling: 3 small red onions
4 tins of jackfruit
4 tsp minced garlic
2 tsp cayenne pepper
2 tsp cumin
3 tsp paprika
3 tsp brown sugar
1 tsp chilli flakes
2 x bay leaves
1 tsp onion flakes
4 tsp oregano
2 tbsp of maple syrup
Juice of 1 lime
1/2 tin of tomatoes
4 tbsp tomato concentrate
2 handfuls of coriander for garnish
Ingredients for the salsa:
1 small red onion
Juice of half a lime
1 red pepper
2 handfuls coriander
1 small red chilli
Ingredients for the soft tacos:
I used plain wraps and used a small bowl to cut two small circles out of each wrap. But you can use store bought tacos if you prefer the hard shells.
This recipe, though it has a fair few ingredients, is actually quite easy to do. Start by frying your onions in some oil on a medium heat. Then add all of your spices. Simmer for a few minutes stirring regularly to bring the flavours out of the spices. Next add the tomatoes, tomato concentrate and maple syrup, stir and allow to simmer for a few more minutes.
Take your jackfruit and put in a baking pot. Spread it out evenly then take the sauce and pour it all over the top of the jackfruit, making sure it is all covered. Put in the oven for about 30-40 minutes on a 160 degrees. Check regularly to make sure it isn't burning and if it is just mix it a bit. It should begin to caramelise and turn sticky. Take it out of the oven and using two forks rip apart the jackfruit like you would do with pulled pork. Taste and adjust any flavours according to your taste.
To make your pineapple salsa. Cut open the side of your pineapple and scrap out the contents to leave a bowl sized area for the salsa to go in. Chop the pineapple, and all the other veg and combine in a bowl. Add your lime and coriander and then mix again. Scoop into the pineapple to serve.
To make the soft tacos take your large wrap and then cut two circle out of it (a small bowl or large mug would work, just score around it with a knife.) Then you fold them in half and layer up in a circle around your filling. Don't throw away the leftover wraps though, cut into small triangles, add oil, oven cook and use them to make doritos!
