Healthy Salted Caramel Oat Balls With An Almond Butter Centre

A nice easy recipe with these handy and healthy oat balls. Perfect for a little afternoon energy pick me up, or to have with a coffee for a nice, healthy treat.


Ingredients for approximately 20 balls:

150g of almonds plus a few extra tbsp to roll the balls in

75g of linseed

125g of organic oats

200g of medjool dates

2 tsp of vanilla essence

2 tbsp of maple syrup

Almond butter (half a tsp per ball)


First things first you really need a food processor for these. I tried using my hand blender and, whilst still doable, it was a lot more work and as you can see there are still quite a lot of chunks of date and almond in each ball (lucky for me I quite like chunks!)

To begin, blend your almonds in your processor first. Blast as fine as possible then take out a few tbsp and put to one side. Now add your linseed and oats. Again blend to as fine a consistency as possible.

Finally add all your other ingredients and blend until they form a smooth paste. If you need to, add a splash of water to help.

Once ready, take a nice chunk of the ingredients and lay flat on your hand. Take your 1/2 tsp of almond butter and put it in the middle of the chunk. Then take another sized chunk and put it on top (basically to sandwich in your almond butter. Roll everything into a soft ball in your hands. If it helps wet your hands slightly beforehand with water so it doesn't stick to you.

Once you have a nice ball, take your remaining almonds and sprinkle with a touch of salt. Mix together and then roll each ball in the almonds, making sure to cover as much of the ball as possible.

Once finished, you can store these in the fridge in a sealed container and grab a treat whenever you need a quick fix.
