Fruit Salad With Thai Herb Infused Coconut Sauce

Aw man, this is genuinely my new favourite breakfast! It's so light and the flavours are just perfect together, I really can't get enough.

To top it off it's incredibly easy to make and is a great dessert alternative too (it tastes a bit like carnation milk, but healthy!) What's not to love?


Ingredients for sauce to make 4 portions: Half a can of coconut milk (use reduced fat if you desire)

The juice of 1 lime

2 tsp of dried lemongrass

2 tsp of maple syrup or honey

A handful of finely chopped fresh mint

Add to the fruit salad of your choice, I chose honeydew melon, strawberry and mango.


Simply use a hand blender to combine all the ingredients for the sauce and make it nice and fluffy. Then drizzle over your chopped fruit and sprinkle with the mint- YUM!
