An oh so delicious but oh so easy recipe today.
This soup is one of my all time favourites, it's just so flavourful and satisfying (is that a weird thing to say about a soup?) Either way i'd definitely recommend this bowl of goodness to satisfy your tastebuds on this fresh March evening.

Ingredients for 6 servings:
1 bag of frozen sweetcorn (about 400g)
3 medium potatoes
2 carrots
1 red bell pepper
2 stalks of celery
1 large white onion
2 bay leaves
1/2 tsp of paprika
1 tin of coconut milk
500ml - 1 litre of vegetable broth
Salt and pepper to taste
A dash of olive oil
1 salad onion and a handful of fresh parsley to serve

To begin, finely chop and saute your onion in oil in a pan on a medium heat. When it has softened add your other finely chopped vegetables, except the sweetcorn and stir for a further few minutes.
Next add your spices and bay leaves. Followed by your vegetable broth. I would start with just 500ml of broth and add more later if you want to. Cook your vegetables until soft and then add your sweetcorn. cook for a few more minutes.
Take half of your soup mixture and put in a blender (remove the bay leaves.) Then re-add this back to the soup. Finally add your coconut milk and mix the whole soup together.
Add any more salt / pepper/ spices you think it might need at this point, also any more broth you would like depending on how you like the texture of your soup.
Serve with a sprinkle of salad onions, parsley and next to a nice chunk of bread.
