A Simple Med Veg Couscous

This recipe is so simple and yet always a winner. A simple and delicious meal to eat alone or add as a side to any meal to make it even more flavourful.


This recipe makes about 4-6 portions


300g couscous

300ml veg stock

1 small red onion, diced

1/3rd cucumber, diced

A punnet of mixed cherry tomatoes, diced

A handful fresh basil, chopped

A good glug quality olive oil

Juice of 1 lemon

1tbsp dried basil

Salt and pepper


To begin, add the couscous and stock to a bowl and allow it to soak.


Once your couscous is done and fluffy, Dice your veg and add to the bowl.


Add your herbs, lemon juice and seasoning to taste.


Blend together, it's really is that simple!


Serve straight away or keep in a sealed container for 2-3 days and add to your salads as an extra whenever needed.
